A white wine made of catarratto grapes macerated with their skins for a long time, that brings back the memory of the peasants of Marsala, in the Sicily of our grandparents. The extended skin contact allows the extraction of tannins from the berries, thus lending its character to the wine.
“Macerato Catarratto” is very low in sulphites (13mg/l), all of which naturally occur during fermentation. It’s a wine that brings back memories, but also a wine we actually remember, an evolution of the kind of wine the local peasants once produced in the Marsala countryside.Tradition and innovation come together in a glass of wine that tells the ancient story of the intense relationship between the winemaker and his land. A glass of wine that observes the peasant history of a past-time Sicily through the eyes of the present.
“Macerato Catarratto” is very versatile and served at a temperature of 12°-14° C it can be paired with fatty fish (such as Red Tuna), while served at 16°-18° C it’s of great company to meat-based dishes, such as Versatile in the combinations at the temperature of 12-14 ° “Macerato Catarratto” can be paired with fatty fish dishes (like Red Tuna), while at a temperature of 16 ° -18 ° it can worthily accompany meat dishes such as oven-roasted kid goat, “qualeddu e salsiccia pasqualora” (Mediterranean cabbage and Sicilian sausage) and generally all traditional Sicilian dishes.
